    So last night I went to The Spence, which is a high end, eclectic restaurant founded by chef Richard Blais (won Top Chef). The food was amazing, needless to say, we ordered 4 entrees and split it between 3 people. I asked them if they cook Sous Vide and they were like "of course, it's pretty much a staple of culinary these days". So I guess it's not that bad or frowned upon in the culinary world.

    I hear you guys, and honestly in a lot of ways I completely agree. I'm a big green egg and Weber owner. In the last couple years I switched to a cast iron skillet for cooking steaks, which is amazing FYI. But, this proven technique is almost flawless. Like others have posted above, it helps from over/under cooking seafood, steak, chicken breast, etc. Most recipes still require some sort of a quick (:30 sec) seat at the end.     So I just bought the Anova Precision cooker. It is on sale, $50 off through May 7th on the link below ($130). Apparently it is a an easy way to cook restaurant quality food. This model has a pretty cool Bluetooth app that controls the cooker. My friend swears by it for steak, chicken, burgers, BBQ, etc. I figure I will give it a try and post my reactions.     Lol, my buddy who lives in Miami was at the gym yesterday morning and saw Lin and Marvin working out with the trainer. He said he walked over to them and asked how many times were they were going to flop. He said their response was: MW gave him a death stare, JL kinda laughed, and the trainer made a comment along the lines of my buddy being a "tough guy talking shiz". Needless to say, it was really fun talking smack to him last night! Go Hornets!
