what impact did Peppers walking have on Jerry?

It's no secret Jerry thought highly of Julius, exemplified most notably by basketball outings and publicly calling him out to take a larger role in team affairs.
It's also interesting that during the fox era, the Panthers have kind of been run like a small time, family business. Loyalty has played a premium over ability and cost effectiveness.
Maybe Richardson finally had a harsh wake up call when someone he thought so highly of basically betrayed the trust he'd placed in him. Maybe Julius walking is what has spurred this recent and radical change in team philosophy.
maybe...pstall is gay

My Dad ran into JR and Peppers in the stadium not long after he was drafted. He was a photographer at the time. Richardson was driving him around on his golf cart showing him the stadium and he stopped and introduced Peppers. He said you could tell how happy Richardson was to have Peppers in Carolina. Like a new father showing off a child.
I would imagine it has had an impact on Jerry. However, my line of thinking is more that JR is coming to grips with his mortality after the heart transplant and is desperate to leave the Panthers in a good position after he is gone. Maybe even bring a Lombardi to Charlotte before he bites the big one.

Maybe he's acquiring some of the personality of the person whose heart he acquired. It is known to happen.
Perhaps. I hope you are joking, however.
Taking the serious route because I want to downplay this because of my pent up anger at those who have tried to feed me this in person: there is no evidence that this is even possible nor evidence that it has happened. The "evidence" is merely hearsay on the part of those who receive the organs, who most likely changed their habits due to their new chance at life. They then research the person whose organ they have and find that they have similar traits. It is worth noting that you can find someone with similar traits as you right next door.
Also, there are many other aspects that have not been explored. For example, maybe you are more likely to accept the organ of someone who is similar to you (yes, personality wise). Is that likely? No, but it's just as likely as cellular memory.

I hope his new heart wasn't a Falcon's fan...Maybe he's acquiring some of the personality of the person whose heart he acquired. It is known to happen.
