Over medium is the way to go. I had country ham with mine this morning.

This thread inspired me. I made an omelet with roast beef and provolone. It was delicious.

Country ham doesn't exist in Maryland :(

3 egg omelet
fresh bell peppers, onion, banana peppers, jalapeno, Spinach, basil and rosemary, all out of my garden this morning.
Heirloom Tomatoes from Key West
and Bacon
Also, I toasted some pine nuts

Pretty good!

It does, but it is called Canadian Bacon.

False, canadian bacon is just like regular bacon but it's a different cut, it's the back cut.

Country ham is cured completely different from any type of bacon. I actually used to work in a Country Ham production plant. Goodnight Brother's Country Ham, in Boone NC. I only worked there for 6 months though.

4 eggs scrambled with plenty of:
Butter
Diced ham
Diced tomatoes
Diced peppers

Sausage links
Slices of honey-do/cantelope/sliced pineapples (choose one)
Toasted bagel with cream cheese, and a bowl of oatmeal

Cup of coffee, and apple juice.

Sunday am tradition @ my house.

I was wondering why Dan wanted a feta & spinach omelet for breakfast. :)

Free range over easy with with grits salt & pepper and a side of bacon or sausage & toast or biscuit.

Blech, don't need any eggs except maybe scrambled as a side with some ham. In tater salad or for cooking sure, as a runny, putrid mess on my plate, I'll pass.
