What should I do?

Got a new job. Turned in my 2 week notice in hopes of getting my unused vacation days. Probably not getting them. Scheduled to work Thurs, Fri, and Sat.

Do I finish out my time, or take a long holiday weekend? Right now I think I'm just gonna be "sick" on Thursday.

You don't owe them anything. If poo hit the fan they'd fire you in a hearbeat.

No way in hell I would go into a job on Thanksgiving that I already gave my two week notice to....

Every other place I've worked at made concessions- put a note in the guests rooms saying "Our employees want to be with their families, we will provide service if you request it, yadda yadda yadda", and most people were cool with it. But at "The Plantation" -Wrightsville Beach's boutique resort- everybody has to work because "WE'RE GOING TO BE SO BUSY". They even put up a notice telling employees to park on the street and walk to work so they can have the parking spaces.

Do you think you'll ever need the reference?

If so I'd suggest you not just no-show. You can still be fired and ruin your chance to collect that unpaid vacation time.

If your boss has any shred of reason they will work this out with you.

If you dont go in you wont be screwing your employer, youll be screwing the people you worked with - someone is going to have to pick up your slack over the holiday and they probably have a family too. Man up.
