They soak 'em in Tobassco, then bread them, then fry them. Fuggin delish.

Did you try the beef rib there?
I normally just order the pulled pork, cheddar grits, and collards. However, my in-laws were with me and they ordered the meat sampler so I tried a little of everything. I think I even tried those burnt ends you were talking about one time. It was all good. Mac's does a good job.
Funny story. My in-laws decided to move down here from Michigan and the deciding factor was dining at Mac's. They're skinny people too, so to see food influence a life decision was quite entertaining for me.

The sampler plate is in the pic above. Their brisket is really good. I think the BBQ is mediocre.
I tried to tell them that there is better que around here than Mac's. Everything else at Mac's is OK. I love the beer selection and the pickles though.
