Apple pie to me is a very cool weather/fall dessert.

 

Spring to me is key lime pie or something served cool....

 

or peanut butter pie

 

 

To me spring pie needs to be sweet.

lemon cream or banana cream

 

not meringue.

 

for the lemon cream pie the citrus does something funky to the whipped topping when it sits out a while so make sure that you have the pie itself chilled really well and don't put on the whipped cream until right before serving. probably not a bad idea to do the same with the banana cream but it's not as crucial.

Key Lime has to be the correct answer for Spring/Summer.  Cool, sweet, can be rather light...winner.
