Most whipping siphons can only be used for cold food prep, like whipped cream, etc. However a hot/cold whipping siphon can be kept in a hot water bath to make things like Hollandaise/Bernaise sauces and other things that need to be served warm. If you're going to get one though, don't go cheap. The cheap ones have caused a number of injuries including one death of a super hot fitness model a month or two ago. ISI makes the best siphons out of stainless steel with metal threading on all of the attachments. The cheap ones can use plastic or lighter weight metals that won't withstand the pressure of the CO2 or Nitrogen cartridges. Mine has never had an issue, but it cost me about $100.

I have done more than a few things that some would call dangerous, but through due care, training, etc., I've come out okay so far, but man oh man, after reading a couple of stories about those things, I think I'd rather go through a dozen German fraternity duels than I would using those things, even wearing the same protection. The French legal system will be justifiably harsh with that one case.
