how to you make your shrimp...do you make it with a gravy?  I stink at making gravy so I just sautee the shrimp with diced onions, peppers and tomato and use that as my topping for the grits, but I'd like to learn to make a good gravy.

What I do is start a pan cooking with chopped up bits of country ham (only good country ham -- Daniel Boone brand, half a cup at most) with half a red onion chopped fine with two tablespoons of unsalted butter. Once the onion starts to go translucent and the ham begins rendering I'll throw in one finely chopped garlic clove (definitely not the whole bulb) along with a few grinds of black pepper. Once that becomes fragrant I'll throw in the shrimp (peeled and deveined 31-40 size, patted dry with a paper towel). Crank the heat to medium high and saute` the shrimp vigorously, adding in a dash of kosher salt (not much because of the ham, though), more pepper and a dash of paprika. As the shrimp finish, I'll pour in half a good, strong mug of black coffee to make red eye gravy. Let that cook down about  half way and boom, serve over homemade (long cook) creamy grits. Garnish with some chopped green onion and parsley.
