Maybe you should try feeding him a higher quality food. I've read about dogs eating their own poop because they're not getting enough nutrients when they eat their food initially so they eat their poo to get more. Not saying that's the case, it's just something I read once.

the opposite could be said....real good food and so nutrients slip through to the poop so they eat it knowing it's good for them.

I wouldn't mind, but my dog used to do it and he has a really sensitive stomach so then when we got home from work and fed him he'd throw up his food soon after because he'd have a belly full of turds.
