Anyone ever cook Sous Vide???

Try it sometime and if it doesn't produce the best flank steak you've ever had, just don't ever do it again and move on with your life.

 

I'm amazed how expensive Flank, tri tip, and skirt have gotten...

So last night I went to The Spence, which is a high end,  eclectic restaurant founded by chef Richard Blais (won Top Chef). The food was amazing, needless to say, we ordered 4 entrees and split it between 3 people. I asked them if they cook Sous Vide and they were like "of course, it's pretty much a staple of culinary these days".  So I guess it's not that bad or frowned upon in the culinary world.

Actually, my gf is a chef and uses sous vide at her restaurant. Though she did say she only does it when they're jammed and has to cook a lot of one dish for a large group.

That's why I like it. We have a smaller kitchen and it allows me to multi-task without ruining expensive steaks/fish. I like it for poaching a bunch of eggs if i'm serving Eggs Benedict. It's definitely a fad appliance, but it does have practical uses.

So what did you do for the 2-4 hours you were waiting on your food?

    • Not really. It all depends upon perspective. You can draft quality OTs high every year. They have one of the lowest bust rates by position. DTs, less so, but good ones still come along at a regular clip. With WRs, it's simply best to draft one in the first round if you want a legit play maker. Moreover, WR is going to set you back more than OT or DT at really all statuses, meaning JAG receivers are going to make more than JAG OTs and DTs, and elite receivers will make substantially more than elite OTs or DTs. I would also argue that it's much harder to find a franchise level OT or DT that can have an altering impact upon the game. So, if you don't believe they can, you may as well wait for day 2 or 3. That's why sticking to your board is probably the wisest thing to do. If you're not committed that the value is there, then what are you doing? Lastly, I don't think you should necessarily draft in a vacuum, but you must look at each team from year to year. People want to make them the same, but they're different. You have to start over every year and identify where the strengths and weaknesses are. You can't say, "Well we drafted [so and so] last year or two years ago, so we'll just draft this this year." That's not realistic and it can be highly counterproductive, especially in light of the reason that you should be trying to use FA to set up the draft.

McMillan was good, and was certainly limited by Bryce Young’s mediocrity, but there are still concerns about his work ethic and passion for football. If he doesn’t progress in the coming years, we’ll know why. Original Write-up: Wow, our Panthers source did not pan out for once. Jalon Walker was heavy chalk to go here, but the Panthers decided to draft a No. 1 receiver instead. While this fills a need, I’m concerned with Tetairoa McMillan’s work ethic, which is something you never want to hear from a first-round prospect, especially one who is chosen in the top 10.
