Cause of the texture or because you know you're eating a big ole cow tongue?

Lingua needs to be marinated and cooked properly, by properly I mean nice and crispy then diced up. 

To many places under cook it then fail to chop it correctly so the texture & flavor can be very off putting. 

I've been trying to get my wife who is (Mexican) to eat a Lingua taco for 20yrs even done correctly she can't get over that mental hump.

It's 100% in my head.  There is a little authentic Mex place here in town that is fantastic....he gets it there all the time...just. can't. do. it.
