How do you coal fire pizza?

I was wondering the same thing because of the smoke but did some research. First off his website.

http://www.cheesemoz.com/AboutUs/CoalFired/tabid/86/Default.aspx

Cheese Mo’z freshly prepared food is artfully cooked in an 800° coal fired oven using only anthracite coal. Why coal? First, the taste, it’s undeniably obvious. Second, the texture. Coal burns hotter than wood and when cooked faster, the dough retains its moisture. And finally, anthracite is one of the cleanest burning natural resources, emits minimal black smoke damage to the environment and is cleaner than wood or gas. Anthracite is not only a clean burning alternative to wood and gas, but is also an abundant U.S. resource.

Then from Britannica online.

Unlike many bituminous coals, they are clean to the touch. Although anthracites are difficult to ignite, they burn with a pale blue flame and require little attention to sustain combustion. In the past they were used for domestic heating because they produce little dust upon handling, burn slowly, and emit relatively little smoke.

Good luck Dan on the restaurant.

Awesome, Dan. Thanks for the invite. Can't wait to check it out, sounds like a great place to get some good food and catch a game. Best to you on your new restaurant and, as others have expressed here, thanks for the memories! You were a heckuva player for Panthers!:cheers2:
