Seems like a regional thing. I tried pimento cheese and it's not my thing.

I like the actual taste of the burger. Any kind of cheese kind of ruin the full burger experience imo.

Oh, I make a lot of different burgers.  Double smash patty is the best cooked on blackstone with duck fat.
