I just had a steak for dinner

I am low on iron so i probably have steak twice a week. Gives me power.

Most of the time i will just do a very rare tenderloin - extra small.

Last night I had the biggest T-Bone my butcher could legally give me by law washed down with a bottle of cab.

I do a touch of oil, cracked pepper and sea salt. Not to much.

I love steak

This man knows what he's talking about. Lately, I'll get a very small tenderloin. I still get an awesome steak and I feel better knowing that I'm eating red meat in moderation.

I'm also with you on the cabernet as well. As of late, I've gotten in the habit of caking my steaks with peppercorns and washing them down with imperial IPAs. Mmmm.

I feel like an idiot for not knowing that was steak au poivre, but I look forward to the recipe just the same. :D

Meh you would have to be a cheese eating surrender monkey to know that. :o

Here is another thing. Most steakhouses will not have Steak au poivre on the menu...but they will all do it and in fact some chefs love it. Order it next time you hit your favorite spot and you may be surprised.

I had the second-best steak I've ever had just last Friday night at a small restaurant in Gadsden, Alabama. It was divine.

I will one day learn to make a steak that way myself.

honestly it pretty simple

Use an oil with a high smoking point like peanut or grapeseed. Use cast iron or copper, turn the heat up as high as possible. Finish with butter as you finish and while it's resting. Let it rest for just a little bit with foil, the smaller the steak the less time you let it rest.

A 1/2" steak only takes about 90 seconds per side. The bigger the steak is you might be better off finishing it in the oven. Any cut from the tenderloin will need to be finished in the oven because it's too lean to stay juicy when searing it.

It took me about 3 times to get it perfect. It's really foolproof.

    • Never, and it doesn't have to be an old grizzled vet, sometimes a vet can learn something from a young player too.   Do you not see players talking to each other between plays, quarters, on the bench, wherever, in EVERY sport? It's what players do, especially the great ones, they're always working on their craft and learning tips from others to better themselves.   So when your entire receiving room outside of one player, who has mostly played special teams in his career, has played 1 season or less in the NFL, it's not a lot of experience there in the locker room and on the sideline and is a tad concerning in regards to the proper growth of all these young WRs with great potential.
    • So me "putting my foot down" would be me spending more money each season to watch the games without sound at the bar? Do you not see how dumb that sounds? Streaming a game here or there isn't tough, but doing it for 17 games a season, when more than half the time the quality is terrible if it's even working at all, and it's just an awful experience to follow your favorite team. It's literally spending at minimum an extra $100 a season to have a worse viewing experience if I were to "put my foot down" as you say, and then don't get to also be able to easily watch all my fantasy players as a bonus on top. I spent at over a dozen years going to the bar every Sunday to watch us play, so now that I get to watch from the comfort of my couch, plus get all the other games, and spend less money doing so, yea, I'm going to pay that money without a second thought, it's a great deal for me and tons of other fans.
    • I wanted Stroud as well because Reich only wanted folks who fit his scheme and he isn't a good enough coach to adapt to his players. Canales didn't have that choice and was hired knowing that his job was developing Bryce. To his credit he was able to embrace the challenge and make the necessary changes.
