I think realistically I would probably choose chicken because chicken is so versatile and it already makes up at least 80% of my diet. Plus with chicken you get eggs too.

But the glutton in me would probably choose pork. With pork you get bacon, sausage, NC bbq, pork chops, pork steaks, ham hocks, fat back, pork rinds, etc...

Pork, hands down... Pork chops, ribs, bacon-wrapped bacon, Italian sausage, ham sammiches, smoked butt, garlic, cheese & spinach stuffed Pork Loin, Cold tenderloin sammiches...Marinated, stuffed & grilled thick-cut chops, the be-all end-all...What other meat is so versatile?

I'd pick chicken for the same reasons, even though I much prefer a good steak to chicken. Like you said, chicken is more versatile -- you can prepare it just about any way you want, and it would probably work in more dishes than the other meats on the list.
