Ever have an Elk burger?

I did last night. Bro-in-law killed an elk and had it processed. Ground some of it into burger meat. It was suprisingly delish. Not gamey at all like deer.

Apparently they have some kind of lotto up here every year for hunting elk. They limit the number hunted to 70 per year.

Ever had Buffalo burgers? It's pretty good. I can see why Native Americans ate it for centuries.

Preparation is a little different than beef too. It's a red meat, but the grease runs very thin, so it cooks quick. It also retains it's thickness easier than beef too.

game meats like elk or venison can dry out pretty fast especially if you grind it up without extra fat.

I've had and cooked elk. Also recommend trying an ostrich steak medium rare. Taste is somewhere between duck & beef.

Wild Boar is good stuff too.
