Any one have or know of some good sausage recipes? I will be using primarily pork and maybe some beef. I know the web has plenty of recipes but wanted to see if anyone has some recipes that they have tried and liked. I like mostly link breakfast, brats and Italian styles. I can see the potential for parity threads here too.

Just experiment. My dad used to get deer hams processed at a place near my house (Clarks), and get it all made into sausage.

Run some peppers (green, red, or any), onions & garlic through a food processor. Mix with you ground meat, add some salt, pepper, fresh basil, fennel seed and a little crushed red pepper...

Change the seasoning, remember what you like & what you dont. Things you might not like by them selves may be excellent in the mix. Play with your sausage, you'll get it...
