I need to make a dessert

Take your cheesecake idea to the next level.

Cut the recipe in half but use the same size pan (so you wind up with a cheesecake that is half it's normal height.

Freeze the cheesecake until it's almost solid. Cut it into small cubes, about one inch by one inch.

Melt some chocolate over a double-broiler. Dip the frozen cheesecake into the melted chocolate until each piece is fully covered. Set them out on some wax paper and put them back in the freezer to cool. Trim the chocolate around each piece so you have a nice shell.

I've made these cheesecake bites a few times. Always a hit. Always ruins a diet.

Chocolate eclair dessert

Cheap, easy and fast

Original recipe makes 1 9x13-inch pan

1 box graham crackers

2 (3 ounce) packages instant vanilla pudding mix

3 cups milk

1 (8 ounce) container frozen whipped topping, thawed

1 (16 ounce) container prepared chocolate frosting

Line the bottom of a 9x13-inch pan with graham crackers. In a large bowl, combine pudding mix and milk. Stir well. Stir in whipped topping to pudding mixture. Spread half of mixture over graham cracker layer. Top with another layer of graham crackers and the remaining pudding. Top all with a final layer of graham crackers. Heat the frosting in the microwave for about a minute and stir, pour chocolate frosting over top of the graham crackers. Refrigerate until serving.

Ice Cream Cake

2 boxes ice cream sandwiches

16 oz cool whip

1 bottle Magic Shell Chocolate

In the bottom of a deep dish,(I usually use a disposable aluminum lasagna pan), place one layer of unwrapped ice cream sandwiches, then spread 1/2 the cool whip on top, then one more layer of ice cream sandwiches, and spread the rest of the cool whip on top. Lastly, shake the magic shell well and drizzle the whole bottle over top of the cool whip. Place in the freezer until ready to serve. It helps to let it set out for about 15 minutes or so prior to cutting if the cake is frozen solid.

I make these two desserts a lot. There are never leftovers because people love them.

That ice cream cake ... I have a friend who drizzles (pours) kahlua over it so it seeps down into the ice cream sandwiches before you put the last layer of cool whip on it. Of course, then you have to keep it away from the kiddies!
