I normally cook what our opponents city is famous for but then a team like Indy comes to town and it throws me off.

I am a card carrying pork guy and am aware of the NC protocol but when we play a team from the heartland I will normally go with beef.

Then go steaks and beef franks with some cured bacon accoutrement.

Brisket gets too dry for me.

It does get dry if you don't wrap in foil and let rest in a cooler under some towels after you take it off.

Im sure a seasoned vet as yourself has all the tricks down to a science.  My experience shows that the further into a game day i get, the more my culinary skills diminish for some reason.

Cant quite put my finger on it...
