I've mostly gone back and forth between Adam Peters and Ed Dodds, though I'd be okay with Jeff Ireland or Joe Schoen.

I like Peters, Schoen, and for a big gamble (but possibly high returns), Poles. Out of the 3 I would probably pick Peters

Peters and Dodds are both young and have very successful resumés. They seem to be fairly different in the personality department though.

Peters comes off like the boss who'll frame his criticism in more constructive terms while Dodds seems more like the type to say "listen up and I'm gonna explain to you why you're bad at your job".

For entertainment I’d pick the American psycho looking guy for the pats , but I think the San Fran guy is the way too go I think he’ll be aggressive. I want an aggressive gm, someone that will tail gate you if your driving slow in the left lane  that type of gm

That's probably more Ed Dodds than Adam Peters.

I'd take either one though. They're both very good at their jobs, just different.

Kinda find myself wondering between Peters and Dodds, which one would David Tepper prefer?

Dodds has a "work" personality a lot like Tepper did in the financial world. It's an all go, no quit, balls to the wall, "not good enough until it's the best" sort of mentality. And he expects everyone working for him to be the same way.

Peters is more like the quiet, analytical guy, the one who looks and sounds like he knows everything about everything and can answer any question you ask like an expert. He's also got some background working with analytics in San Francisco, something Tepper would appreciate.

Granted, the choice could very easily be one of the other candidates, but I genuinely feel like one of these two guys would be the best for the job.

Peters.  In a short time the 49ers became relevant again.  Not sure how accurate but I would imagine he was a great help for Lynch in determining who they drafted.  Plus as Mr. Scot pointed out he an Analytical guy.

He's young so he'll be more receptive to working with Rhule.

I would like Dodds and believe he would do the best job but his personality may clash with Tepper. Tepper may want a "yes" man. If so, it'll be some off the wall named person who has no backbone.
