I have many SC friends and not one of them would eat mustard sauce. I can appreciate it as a novelty.

Mustard sauce isn't for everyone for sure. I can understand why some want no parts of it. But it really depends on the meat you are pairing it with and what kind someone is trying. They are by no means all created equal. There's one brand in particular that I like but now you have to order direct from them and it's fairly pricey.

Grilled pork. Mustard based BBQ is for pork. You can put it on chicken too, but it's not for hot dogs and hamburgers.

Also, there is only one BBQ.  Eastern NC.  It was invented there.  It has a certain primal aspect to it.  All other BBQ types were created to make it more palatable to children and sugar addicted fatties in the other states that try to ride our coattails and pretend to be southerners, like Texas.

I had a roommate in college whose mom sent him tons of frozen mustard sauced BBQ.  That was the first time I tried it.  I wouldn't go out of my way to get it.  But I remember liking it.

Stopping by Reds on the way to Beech from the QC was my tradition growing up.

A finely chopped red slaw with the Q was always my go to. And the puppies. 

It’s been a while since I had pulled pork in NC (married into a Jewish family in the Chi north burbs lol). Kosher be damned, I still would f with it when I visit. I’m just “observant” anyways lol

Chicken is the main meat I've paired with mustard based. But I've also put it on burgers. It depends a great deal on the sauce brand.

Mustard-based is definitely best for chicken. For real NC pork BBQ, it's vinegar-based. That tomato-based ketchup stuff is not for most people and as for Alabama white sauce, speaking as a former resident of Alabama...it's definitely best for the trashcan.
